Vegetarian Breakfast Pizza
1/2 lb veggie breakfast sausage (Morning Farms鈥?patties seem better than Boca鈥檚 links)
1 package of crescent rolls
1 cup loosely packed hashbrown potatoes
1 cup shredded cheddar cheese
5 eggs
1/4 cup milk
1/2 tsp salt
1/8 tsp pepper
1/2 of a green pepper, diced
1 tbsp grated parmesan cheese
some garlic salt, basil, oregano and rosemary to taste
(prep time: 35 minutes (if you鈥檙e slow like me), cooking time 30 minutes)
While you鈥檙e thawing the sausage and hashbrowns, make a crust from the crescent rolls in an ungreased 12鈥?pizza pan (with lip). Make sure to fold some up over the lip. Crumble the sausage onto the crust. Sprinkle on the thawed potatoes and then the cheddar cheese. Mix the eggs, milk, salt and pepper and pour it on top. Add the green peppers, then sprinkle whatever other herbs you鈥檙e using and the parmesan on top. Bake at 375F for 25-30 minutes.

Egg Breakfast Pizza
Ingredients:
1 pound ground sausage
2 (12 inch) prepared pizza crusts
12 eggs
3/4 cup milk
salt and pepper to taste
1 (10.75 ounce) can condensed cream of celery soup
1 (3 ounce) can bacon bits
1 small onion, minced
1 small green bell pepper, chopped
4 cups shredded Cheddar cheese
Directions:
1. Preheat oven to 400 degrees F (200 degrees C). Place sausage in a large, deep skillet. Cook over medium-high heat until evenly brown. Drain, crumble and set aside.
2. Place pizza crusts upside down on cookie sheets and bake for 5 to 7 minutes. Do not allow to brown.
3. Beat eggs, milk, salt and pepper. Scramble eggs until firm.
4. Remove crusts from oven, turn right side up, spread 1/2 can of cream of celery soup on top of each crust. Spread 1/2 of egg mixture on each crust. Sprinkle bacon bits on one pizza and cooked sausage on the other. Cover each with onions and peppers. Top each pizza with 2 cups of cheese.
5. Bake in preheated oven, for 25 to 30 minutes, until cheese is golden brown.
Precook all your meats, saute' your peppers and onions. I use a really large nonstick skillet for mine. I also use boboli crusts.
First, I spread either grated cheddar or thinly sliced velvetta on the crust. while the oven is preheating, I make an omlet using all the meats and veggies with egg. I let sit until the egg is firmly set and slide it onto the crust. Then I top again with more cheese and bake.
