HAM-AND-EGG PIZZA SQUARES
Rosemary Leicht of Bethel, Ohio, writes: "I've been a finalist in the Pillsbury Bake-Off three times, so I'm something of an expert at cooking with prepared doughs and bread mixes. Even though these items are simple to use, many people don't venture beyond the package directions. For each contest, I experimented with dozens of recipes, and some of my favorites have been breakfast dishes and desserts. Nowadays I don't enter as many competitions as I used to, but my family still looks forward to my latest creations."
A quick breakfast using prepared dough.
2 tablespoons cornmeal
1 10-ounce tube refrigerated pizza dough
4 thin ham slices
2 cups grated extra-sharp cheddar cheese (about 8 ounces), divided
2 tablespoons vegetable oil
4 large eggs
Preheat oven to 450掳F. Butter heavy large baking sheet; sprinkle lightly with cornmeal. Roll out dough to 12-inch square; cut into 4 squares. Transfer squares to prepared baking sheet. Bake until golden brown and crusty, about 20 minutes.
Top each dough square with 1 ham slice. Divide 1 1/2 cups cheese among dough squares. Return pizzas to oven and bake until cheese melts, about 5 minutes.
Meanwhile, heat oil in heavy large nonstick skillet over medium-high heat. Open 1 egg at a time into pan. Fry, without turning eggs over, until whites are firm but yolks are still tender.
Top each pizza with fried egg. Sprinkle remaining 1/2 cup cheese over eggs. Transfer to plates and serve.

Homemade Pizza
This homemade pizza and a movie is a Friday night tradition at our house. It makes two pizzas but sometimes it's fun to make smaller ones so everyone can put their favorite topping on their own pizza.

1 cup warm water (105 to 115 degrees)
1 teaspoon sugar
1 package yeast
2 1/2 cups bread flour
1/2 teaspoon salt
2 tablespoons oil
Preheat oven to 450 degrees and move oven rack to lowest position.
Dissolve yeast and sugar in warm water in a mixing bowl.
Let sit for 10 minutes to let yeast foam up or proof.
Stir in oil, flour and salt and knead about 5 minutes.
Place in oiled bowl, turning once, and let rise about 30 minutes.
Punch down dough and divide in half; pat each half into two greased round pizza or cookie pans with floured fingers.
Bake for 10 minutes or until crust begins to turn golden.
Sprinkle 1/2 cup of mozzarella cheese on each crust.
Top with pizza sauce, parmesan cheese, mozzarella cheese, and your favorite toppings.
Bake about 10 minutes or until cheese is melted and pizza is lightly browned.

Breakfast Pizza
1 tube crescent rolls
1/2 lb. bacon fried crisp
1/2 lb. sausage, crumbled, browned and drained
12 oz. frozen hash browns
2 C. cheddar cheese shredded
5 eggs
1/2 C. milk
1 t. salt
black pepper
Spray a 9 x 13 pan with cooking spray. Unroll crescent dough and place on bottom of pan. Press perforations together to form a rectangle.
Top with sausage, then add the hashbrowns. Top with cheddar cheese.
Beat eggs with the milk. Add the salt and pepper. Pour over the cheese and hashbrowns. Top with the bacon.
Bake at 350掳F. for 45 - 50 minutes.
I have not tried this one. Most recipes I have found call for cresent rolls. I am looking for one with homemade dough and the use of country gravy. Let me know if you find one too!
10 eggs, beaten
1 cup chopped ham
1/2 cup chopped onions
1/2 cup chopped green peppers
6 ounces shredded cheddar cheese
6 ounces shredded pizza cheese PRE HEAT OVEN TO 350 DEGREES F.
IN LARGE SKILLET COOK HAM, ONION, AND PEPPER OVER MED HEAT.
ADD EGGS.
COOK UNTIL EGGS ARE ALMOST SET (BUT STILL SLIGHTLY RUNNY).
REMOVE FROM HEAT.
ADD 1/2 OF THE MOZZERELLA AND 1/2 OF THE CHEDDER.
MIX WELL.
POUR MIXTURE INTO BOBALI SHELL.
TOP WITH REMAINING CHEESE.
BAKE@ 350 FOR 15-20 MINUTES OR UNTILL CHEESE IS MELTED AND EGGS ARE FIRM.
LET SIT FOR 3-4 MINUTES BEFORE SERVING.
